Fiber-licious Muffins, and other good things

Have you ever noticed how muffins that taste really, really good tend to be more like cake? And how muffins that are reasonably good for you can be a little like cardboard? I think I finally found a solution, and I'm calling them fiber-licious!


Lee's Fiber-licious Muffins

1 1/2 cups flour
3/4 cup ground flax seed (not whole)
3/4 cup oat bran
3/4 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
2 medium carrots, peeled and finely shredded
2 medium apples, peeled and finely shredded
1/2 cup raisins
1 cup chopped pecans
2 eggs, beaten
1/4 melted butter
3/4 cup milk
1 teaspoon vanilla

Preheat oven to 350 degrees.
Mix the dry ingredients in a large bowl. Stir in the carrots, apples, raisins and nuts. In a separate bowl, beat the eggs and stir in the melted butter, milk and vanilla. Pour the liquid ingredients into the dry ingredients and blend just until the dry ingredients are moist. Line a muffin pan with paper cups and fill the cups 3/4 full.
Bake for 15 to 20 minutes, using a toothpick to test for doneness.
Makes about 16 fiber-licious muffins.

Thanks for your recipe, Lee. I have printed it off to try once I get some missing ingredients. Looks scrumptious.

I recently read THE DADDY PROJECT and just loved it! I enjoyed the premise and execution of the story; the characters felt realistic to me (including the inlaws, parents, teenager, and little ones); I couldn't turn the pages fast enough; I thought the last chapter was cute re their HEA and you wrote a beautifully said final paragraph; and the entire book left me with an "ahhhhhh" feeling. Yup; it was a winner in my eyes! Am looking forward to reading more of your books. Thank you for taking such good care in your writing, Lee.

The proposal in the last chapter is based on a real one, and I had a lot of fun figuring out to work the photo booth into the story :)

Thanks, Leigh! Love yours, too! I hope the muffins live up to your daughter's expectations. The brown sugar concerns me a bit, though. Next time I might try a 1/2 cup and see if will maintain the yummy factor!

These sounds very similar to muffins I make called Morning Glory Muffins but yours have less sugar so I'll have to try them! Thanks.

Can I ask...is it really 12 teaspoons of salt or should that 1/2 teaspoon?

Ack! Yes, it's a 1/2 teaspoon of salt. Thanks for pointing out that typo, Marcy. Twelve teaspoons would be 11 1/2 too many! And I often cut back on the amount of sugar that recipes call for.
