My husband and I have moved around a lot throughout our twenty-four years of marriage and many times during the holidays we were without family. That's both good and bad. I enjoy being with family but it's a lot more stressful than just spending the day with your husband and kids. When it's just "us" for the holiday I don’t have to clean the house. I don't feel pressured to go all-out on the decorations. And for fun we've been known to have a "non-traditional" meal on occasion. If it were up to our kids we'd have pizza all the time, so they no longer get a vote.
The one thing I've done through the years whether we eat alone or with family is to prepare a special dessert. I love to watch the food network when I can and Paula Deen's show is one of my favorites. Because of Paula I now have a favorite Thanksgiving dessert. Paula Deen's Pumpkin Cheesecake
IngredientsCrust:
• 1 3/4 cups graham cracker crumbs
• 3 tablespoons light brown sugar
• 1/2 teaspoon ground cinnamon
• 1 stick melted salted butter
Filling:
• 3 (8-ounce) packages cream cheese, at room temperature
• 1 (15-ounce) can pureed pumpkin
• 3 eggs plus 1 egg yolk
• 1/4 cup sour cream
• 1 1/2 cups sugar
• 1/2 teaspoon ground cinnamon
• 1/8 teaspoon fresh ground nutmeg
• 1/8 teaspoon ground cloves
• 2 tablespoon all-purpose flour
• 1 teaspoon vanilla extract
DirectionsPreheat oven to 350 degrees F.
For crust:
In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 9-inch springform pan. Set aside.
For filling:Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined.
Pour into crust. Spread out evenly and place oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours.

. In the photo below he burrowed into the ground. It’s ruining our lawn so the hubby devised a plan. He was going to trap the armadillo and take him far far away deep into the woods away from houses.
ay as he could and slowly lowered the hook. The skunk couldn’t see him because of the solid aluminum piece in the middle. Several times the hubby tried to catch the latch with the hook. I was holding my breath. Finally he caught it and reeled the hook upward and the latch popped and opened. (photo taken after skunk was released. Didn't want to get too close) Hubby slowly laid the rod on the grass and walked several feet away and watched. The skunk turned around and trotted out of the cage and into the woods without spraying that foul stinky scent on anything. Ingenious. I was so proud of the hubby.
gged a lot about the drought here in Texas. Not today. It’s raining. A slow steady rain is tap-tapping against my window screen as I type. Wonderful. I went outside to smell it. There's not a more pleasing scent than fresh much-needed rain. I hope it keeps drizzling on into the night. It’s going to take many, many more days of this to repair all the damage that has happened in the last few months with wildfires and lakes and ponds drying up. But it’s fall and a new season is here. ose was slightly red from going in and out of the house so much. I started singing Rudolph the Red-Nosed Reindeer, inserting his name for Rudolph. He didn’t think that was funny, but you have to sing when you’re putting up a tree, even if you can’t. Right? He said if I didn’t stop the dogs in the neighborhood were going to start howling. They didn’t. We got the tree decorated without incident, except he wouldn't stand by it when I took the photo. Now we’re ready for Christmas, except for shopping, cooking and all the other stuff.
