A Summer Picnic Recipe

Summer's here, and with Canada Day (July 1)...

...and Fourth of July celebrations...

...just around the corner, I thought I'd share one of my favorite picnic recipes for a fresh new twist on a timeless classic ~ potato salad.

Lee's Favorite Potato Salad

1-1/2 pounds red-skinned new potatoes
1 sweet yellow pepper
2 or 3 green onions, sliced
1/4 pound sugar snap peas
3 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon dried dill (or 3 tablespoons fresh, chopped)
salt & pepper to taste

Cut the potatoes in half, cook till tender, drain and set aside to cool. Cook the peas in boiling water for 1 minute till they turn bright green, chill under cold running water and drain. Core and chop the yellow pepper into bite-sized pieces. Put the vegetables into a serving bowl and sprinkle with dill. In a small bowl, whisk together the oil, vinegar, lemon juice, mustard and salt & pepper. Pour the dressing over the salad, toss and enjoy!

Until next time,

July Recipes

Happy Independence Day! I hope you have a safe and fun holiday. Last night we watched some beautiful, dramatic and impressive fireworks over Lake Holbrook in Mineola, TX. These were set off from individuals' docks along the lake but rivaled professional displays. Tonight there will be a community fireworks event that we hope to attend, depending on the ongoing showers we've had the last few days.

If you happen to fix too many baked potatoes or corn on the cob on your grill or in your oven, here are some recipes to use up some of the excess. We cooked out last night and invited our new lake neighbors, Mike and Carol, to eat with us. They just fixed up an eyesore of a house into an HGTV or DIY Network worthy renovation. We prepared more food than we could eat, of course, so I'm going to make the baked potato salad in the next day or two. Enjoy!

The Red, White, and Blue Game

First of all, I'd like to thank all our readers for their responses to my Father's Day blog (posted on June 17). I'm glad my memory of my dad helped trigger so many pictures from your past, too.

~~~
Here we are at another special day, the Fourth of July, a holiday that I'm sure is setting off many memories of its own--remembrances of cookouts with hotdogs and hamburgers; parades and fireworks; and flags flying high and snapping in the breeze, proudly flaunting their stars and stripes in red, white, and blue.
What comes to mind when you see those three colors?
You think for a minute about your choices; meanwhile, I'll tell you mine.
Red ~ fresh, juicy, ripe strawberries--especially since I'm being more careful about eating well and have discovered how much I love them.
White ~ diamonds! How could I leave them off the list--you know they're a girl's best friend! (grin)
Blue ~ a newborn baby's eyes, so innocent and clear.
Those are three favorite items that come to me when I think about red, white, and blue.
Now, how about you?
All my best to you,
Barbara
